Migas

Some days ago my dad cooked migas with fried eggs for me. Migas is a Spanish traditional dish, made with bread, garlic, spices, paprika, olive oil and chorizo. If you put fried eggs in top of it, it is a “Caprice des deux”. Here is a recipe of how to make them. I have to say my dad bought them precooked (you can find some really good ones), but here is the traditional way (this one with grapes):

Migas Aragonesas

Ingredients

  • 1 loaf day old bread
  • 1 longaniza sausage, chopped
  • 1 onion, chopped
  • butter
  • olive oil
  • 1 bunch of grapes

    Instructions

    Tear the bread into bite-size pieces. Sprinkle with water and separate.

    Fry the onion on a mixture of butter and olive oil, when soft add the bread and the longaniza sausage. Fry, turning, until the bread is golden but not burnt. Mix with grapes and serve.
